		<description>This looks wonderful.  I also use pesto and roll it up in beef tenderloin.  I recently prepared a dish I created for TV.  It&#039;s a Salmon Roulade laced with a Cilantro Pesto on a bed of Gazpacho Salsa.  You can view the clip on my blog by clicking on &quot;In The News&quot;.

I love using pesto for everything as well.  Perfect for so many things you wouldn&#039;t even imagine using it for.  Great for potato salads as well instead of the usual mayo which makes it perfect for bbq&#039;s.

However, I have to say I haven&#039;t used it as a vinaigrette.  I&#039;ll have to try that.</description>
