I can relate to this - wanting to avoid the tourist trap of a "Royal Dinner" supposedly showcasing the ancient cuisine of Hue, complete with costume dress-ups (the diner, not the chef) that had been organised by the tour group, I wandered the streets looking for Bun Bo Hue but was not successful - only to come back to home to Sydney Australia to find several authentic versions! I think it is supposed to have annatto and other spices that colour the soup red, though?
