Have just had this for dinner with boyfriend. It was very good, although the beets were a bit more impractical to handle than I had thought, but I managed. I will be taking the rest of it with me to work tomorrow for lunch :9

Aww, love that last line :) No offense to all the single ladies out there but I'm so happy I'm off the market. I remember those days and it is exhausting! As for the tart, it is beautiful. Beets and goat cheese are two of my favorite flavor combinations and I love your addition of pinenuts. I believe I'll be enjoying this tart this week.

That's sweet! Truth be told, my "Mr. Perfect" was once a "Mr Project" too (and sometimes still is...shhhhh). He's also a nice guy.

"My Mr. Perfect and I enjoyed our dinner with a salad and a good bottle of wine and lived happily ever after. "
Ouch, squeeze a little lemon in a single gal's wounds! Luckily I'm not single so all I saw was that GORGEOUS tart. And I have just the goat cheese for it from a little local cheese maker. Mmmmm.

And let your friend know... I married my "too nice" friend because when I needed him, he became a knight in shining armor. Corny but true.

Well, you could probably leave out the cheese all together if you want. Maybe add an extra egg for volume if you do that.
Or, what kind of cheese do you like? I think you could substitute anything. Do you like Feta? If it's not a "crumbly" cheese, then I would either grate it or cut it into small (1/2") cubes.
Personally, I love the tangy flavor of goat cheese, but it's not for everyone I know. It does contrast well with the sweetness of the beets however.
