For One Cocktail:
- 1.75 oz bourbon
- .5 oz Marasco Maraschino Liqueur
- .75 oz simple syrup*
- 1 ounce diced ripe peach plus 1 slice for garnsih
- 3 leaves of fresh mint plus sprig for garnish
In a cocktail shaker, muddle* the mint leaves with the diced peach and simple syrup in the bottom of the shaker.
Add ice, the bourbon and the maraschino liqueur shake for 10 seconds to chill. Strain over a large cube of ice or serve neat in your favorite cocktail glass. NOTE:You may need to use a separate strainer instead of the one in the top of the cocktail shaker because of the peach pulp.
Garnish with a peach slice and a sprig of mint.
*Simple syrup is equal parts sugar and water, heated until the sugar melts and then cooled.
*To muddle is to mix/smash herbs and fruit into the bottom of a mixing cup. You can use a muddle stick or the back of a spoon.
