We have an ongoing battle surrounding our persimmon tree with the squirrels in our neighborhood.

It’s actually pretty simple; they eat the persimmons, sometimes tossing them aside after only a few bites, and we shake our fists at them, yell, and sometimes cry. It’s quite sad, but only for us. I think the squirrels are fairly happy with the deal.

To add insult to injury, it seems that our persimmon tree only bears a substantial amount of fruit every other year. In the bountiful years it’s not uncommon for us to get buckets of fruit, 50-75 pounds of it, so much that we are giving it away and don’t notice the squirrel consumption. Coffee Ice Cream

I know, another ice cream recipe, so soon after the Strawberry Ice Cream? Yes, but it’s summer and there will be plenty of time for cakes, pies and cookies come fall and winter. In summer, all I want is cold and creamy ice cream. Coffee ice cream is one of my favorite flavors, and echos how I drink the hot stuff, light and sweet. I tend to like my ice cream plain (it’s a textural thing), but if you like mix-ins, chopped dark chocolate, toffee pieces, fleur de sel praline, or chocolate covered coffee beans would be a natural fit.

Homemade Strawberry Ice Cream

One of the best things about the summer is all the fresh fruit available. Strawberries usually show early in the season so I always associate them with the start of summer, backyard BBQ, and the 4th of July. Our local farmer’s market had some organic strawberries which smelled so sweet it was just impossible not to buy some.

Last weekend we celebrated a significant birthday (one ending in a zero) of a very close friend. My mother made a knockout BBQ pulled pork and I made grilled vegetables and a killer pesto macaroni salad (recipe to come) along with my favorite lemon cake* and this fresh strawberry ice cream. It was a prefect late spring/early summer meal.

*For this lemon cake, I left out the lavender, multiplied the recipe x 1.5, and baked it in a bundt pan. It made a perfect birthday cake and went really well with …

Call me a geek, but I love “tech” stuff. I got my first digital camera over a decade ago and www.wired2theworld.com (our travelogue web site started in early ’98) was one of the first ones of its kind out there. Now everyone and their brother has a blog.
