Baked Eggs with Tomatoes, Garbanzos and Feta

Months ago when I was researching for a series on eggs, I came across this recipe for eggs poached in tomatoes. While I didn’t include it in the series, it stuck with me as something I wanted to try, having seen similar versions on my travels in Turkey and Morocco. In Turkey this dish is called Menemen (where the eggs are usually scrambled) and in most of North Africa and Israel it’s called Shakshuka.  Even Italy has its version called Uova al Purgatorio (but without the garbanzos). 

It’s not hard to have almost every ingredient on hand to make this dish on the fly; canned tomatoes and garbanzos are staples in my pantry, as are the spices. Fig, Caramelized Onion, and Bacon Jam

When our neighbor offered figs from her tree, I called my mother and asked her if she wanted some to make jam. She had been in a jam making frenzy this summer making over 100 jars of various flavors (strawberry vanilla bean being my favorite) to the point where I threatened a canning intervention. But since neither of us could let good home grown food go to waste, she took some and I used the rest of the figs to make flatbread and fig and goat’s milk ice cream.

While mom made some regular fig jam, she also surprised us with this fig, caramelized onion and bacon jam which she swore would be fantastic on a fried egg sandwich. Breakfast in Cambodia

My typical breakfast is a bowl of cereal or oatmeal plus a cup of coffee. It’s been the same since I was a kid (minus the coffee). As a child, we were poor enough that I got free lunch at school, and now many children in that same economic bracket get a free breakfast as well as lunch. Studies have shown that kids who are not hungry in the classroom learn better. Go figure. 

What does this have to do with Cambodia? For the last few years I’ve been involved with the Ponheary Ly Foundation; a non-profit set up to support schools in and around Siem Reap Cambodia. Ponheary was recently named CNN “Hero of the Week“ and the attention to her and the foundation is well deserved. They’re not affiliated with any religious or political group, and are strictly dedicated to helping poor children get the education …
